Keto Asian pulled chicken salad


1 small already roasted chicken – whole chicken

1/4 white and 1/4 red cabbage finely sliced

2 carrots grated

5 spring onions finely sliced

small bunch coriander chopped

handful of walnuts roughly crushed

1½ tbsp olive or sesame oil – for the dressing


Remove all the meat from the chicken and shred into large chunks. Put the chicken into a large bowl.

Add the cabbage, carrots, spring onions, and half the coriander.

Mix everything together with the olive oil.

Place onto a serving plate or bowl.

Scatter over the remaining coriander and walnuts to garnish.
