Keto Berry Sponge Cake


100 g frozen berries

8 eggs

2 teaspoons vanilla essence

1 teaspoon baking powder

110g butter melted

50 g coconut flour

4 tablespoons stevia powder

To serve – yoghurt or cream and fresh berries


Pre-heat the oven to 180 degree.

Grease your cake dish with a non-stick spray.

In a large mixing bowl, mix the melted butter, coconut flour, stevia, vanilla essence and baking powder together until you have a nice smooth mixture.
Mix the eggs one by one into the mixture.
Place your mixture into your baking dish.
Place your frozen berries evenly throughout the mixture in the cake dish. Try not to let them clump together or your cake will turn pink.
Bake for 20-25 minutes or until cooked through.
Serve with yoghurt/cream and berries.
