Keto Blueberry Muffins
125 g almond flour
2 tablespoons coconut flour
1/2 tablespoon baking powder
1/4 teaspoon salt
1/3 cup granulated sweetener of choice
1/4 cup coconut oil melted
1 teaspoon vanilla essence
60 g fresh blueberries
Pre-heat the oven to 180 degree.
Grease a metal muffin tray or better yet muffin silicone molds.
Mix all the ingredients except the fresh blueberries together in a large bowl.
Add the eggs (Tip – mix in 2 eggs first and if the dough is still dry, then add the third egg).
Add the fresh blueberries and gently fold them into the batter.
Scoop 1/4 cup of the batter into each muffin cup.
Place the muffins in the oven and bake for 20 minutes or until golden brown and cooked through.
Remove the muffins and let them cool down.
