Keto Cheesy Bacon Cauliflower Rice
1 head cauliflower, cut into florets
1/2 cup mozzerella cheese
200g bacon diced
Salt and pepper to taste
In a pan, fry the bacon until almost crispy. As soon as it’s ready put it one side but leave the fat/bacon juice in the pan.
Grate the cauliflower florets into a rice-like consistency.
Place cauliflower rice into the pan and cook for roughly 10 minutes.
Add the bacon to the rice, followed by the mozzarella cheese. Let the cheese melt into the cauliflower rice and remove from the heat.
Serve as a side.
