Keto Mince & Green Bean Curry


2 tablespoons vegetable oil

1 brown onion chopped

2 garlic cloves crushed

1 teaspoons curry powder

650g beef mince

2 tomatoes

2 handfuls of green beans chopped

1 beef stock cube

200 – 500ml water

Cauliflower rice as a side dish


Heat oil in a large pan over high heat.

Add onions to the pan and stir for 3 to 4 minutes until soft.

Add garlic and cook for 1 minute.

Add curry powder and  stir for 1 minute or until aromatic.

Add beef and stir with a wooden spoon for 4 minutes or until browned.

Add tomatoes, beef stock and 200ml water and bring to the boil. Add more water as needed.

Add green beans and cook for 5 minutes or until it is the way you like it (crispy/soft).

Reduce heat to a simmer and cook for 5 minutes or until excess liquid has almost evaporated.

Place curry next to or on top of cauliflower rice in a serving bowl.
