Low Carb Top of the Mountain

(Mexican Inspired Dish)


1 head cauliflower grated or cauliflower pre-made rice

turmeric spice

500g lean beef mince

Old El Paso Original Seasoning Mix

Lettuce finely chopped

Cucumber finely chopped

Tomato finely chopped

Cheddar cheese grated


Boil grated cauliflower rice in 1/2 teaspoon of turmeric spice until cooked. Strain and put aside.

Fry mince in a pan. Add taco spice to mince and fry till cooked. Put aside.

Please note the next part (layers) is done to each individual plate being served and not in one bowl.
First to be placed on the plate is the yellow cauliflower rice. Here you would want to flatten out the serving as you are going to be placing everything on top and you don’t want your mountain to topple over.

Place your mince on top of your bed of cauliflower rice.

Followed by your finely chopped lettuce, cucumber and tomatoes.

And topped off your cheese – as much as your heart desires.
