Keto Tuna Nicoise Salad

Ingredients

1 sweet potato cubed
2 large eggs
handful green beans chopped or halved
10 cherry tomatoes halved or 1 whole tomato chopped
10 black olives
1 red onion thinly sliced
salt and pepper to taste
2 large handfuls lettuce
1 tin tuna, drained

Dressing:
2 teaspoon red onion, finely diced
1 teaspoon white wine vinegar
ΒΌ teaspoon dried thyme
2 teaspoons dijon mustard
40ml olive oil

Directions

Boil the sweet potatoes in a medium saucepan and cook for 8-10 minutes or until tender. Once soft remove the sweet potato from the pot and let cool.

Boil the eggs until medium to hard and remove from the pot to cool. Once cooled, remove the egg shell and cut in half.

Boil the beans and cook for 2-3 minutes until tender-crisp. Remove from the pot and let cool.

Dressing: whisk the onion, vinegar, thyme, mustard and olive oil together in a small bowl.

Mix all the ingredients together, except the dressing, eggs and the tuna in a mixing bowl. Season with salt and pepper. Toss gently to mix.

When you are ready to plate, place the salad first, then tuna and egg halves and drizzle over the dressing.
