So you want to know what to eat on low carb?
So so simple you will kick yourself. All you have to remember is to eat real food. In a nutshell, if it looks like it did when it was alive you will be safe (with a few exceptions).
Think broccoli, think avocado, think pumpkin, think lamb, think chicken, etc
Fruits and Veggies
All leafy green veggies
Aubergine (Egg plant)
Garlic (not too much)
Gem Squash (not too much)
Onions (not too much)
Peppers (red, yellow, green)
Getting the picture?
All meats and poultry (lamb, pork, beef, chicken, duck, etc)
Biltong aka jerky
Hard cheeses (cheddar, gouda, parmesan)
The above list is what I have personally eaten and depending on how you prepare it and how much you eat, depends on how much insulin you have to give yourself.
